The love for certain foods like breads and pastas runs deep for many people, often making it hard to resist! The problem is that these types of foods, when consumed too often, can have negative effects on our bodies: weight gain, glucose spikes and fatigue, just to name a few!

You don’t have to give up your favorite dishes, especially if you only eat them occasionally. But, if that’s impossible for you, or you are trying to watch your waistline, all you need is a healthy alternative!

Here is a recipe for an amazing Italian favorite that will leave you feeling AMAZING!

Linzi’s Low Carb Lasagna recipe!

Ingredients:

3 Zucchinis sliced thin long ways

Part-skim ricotta cheese

Roasted vegetables of choice, cooked in coconut oil spray – can use roasted red peppers, eggplant, yellow zucchini, purple onions, etc.…Yum.

Part skim mozzarella cheese shredded

2 pounds of organic free-range ground turkey meat

Low sugar tomato sauce in a glass jar of choice; should be under 7g of sugar. Read your labels!

Parmesan cheese if desired

Method:

10×15 glass baking pan, 3 inches deep. Preheat oven to 350°. Sauté ground turkey meat. Add ricotta cheese when finished cooking. Spray the pan with coconut cooking spray (non-GMO organic). Place zucchini slices along the bottom to cover it. Cover zucchini with tomato sauce. Add a layer of the ricotta cheese mixed with the turkey and pat down. Add a layer of the vegetables. Add layer of tomato sauce. Add a small layer of mozzarella cheese. Repeat! And repeat again if your pan is deeper! End with the layer of zucchini covered with mozzarella cheese and then tomato sauce. You can sprinkle parmesan cheese and sliced or minced olives on top if desired. Place in the oven for 45-60 minutes. Check on it after 45! Let cool! And then eat! Super yummy!

With love and devotion to amazing YOU, Linzi Martinez!
