Under the direction of Corporate Executive Chef David Garcia, Prezzo restaurants in Boca Raton and Palm Beach Gardens have introduced updated menus featuring a variety of new dishes alongside a selection of beloved fan favorites.
“David’s been a key member of the Prezzo team since 2019 and we are so proud to have him as our new corporate executive chef,” says Christina Pozzuoli, who co-owns and operates Prezzo and Corvina in Boca Raton with her husband, Eddie, under their P Hospitality banner. “His dedication and drive helped us get through the COVID crisis and since then we’ve had the pleasure of watching him mature as a chef and a leader. We admire the passion and focus he brings to every task and we’re excited about this new chapter for Prezzo.”
Prezzo’s concept has always been deeply rooted in soulful Italian cuisine. Chef Garcia brings a playful touch to the table by incorporating unexpected ingredients or flavors that artfully complement the Italian fare while drawing a spotlight. One of the new additions among the For the Table items is the Blistered Shishito Peppers. Although not classic Italian, they are served with Meyer lemon and a roasted garlic aioli, fitting right in among Prezzo classics such as meatballs with whipped ricotta and wood oven-roasted chicken wings. Another new item among the For the Table selections is the Spicy Tuna Tostadas, featuring luscious ahi tuna atop a wonton crisp with sriracha crème, sweet soy, sesame seeds, and Fresno chili.
“I wanted to add a delicious and refreshing raw option but didn’t want to go in a traditional Italian direction,” says Chef Garcia. “The wonton crisp gives a lighter ‘bread’ element and a pleasing crunch with the tuna and crème combining for this amazing richness that echoes a perfect carpaccio.”
At Prezzo, pasta takes center stage with new temptations such as Bufala Mozzarella Ravioli featuring mushroom & thyme cream, black truffle, and EVOO, as well as Spicy Orecchiette with broccoli rabe, Pecorino Romano, toasted garlic and oil, and spicy Italian sausage. From the wood-burning oven, diners can enjoy the new Black Truffle Pizza on hand-stretched, house-made dough. In addition, new main plates include Tuscan Salmon with roasted cherry tomatoes, chopped baby spinach, roasted garlic crème, and sautéed zucchini noodles, as well as Chicken Madeira – pan-seared chicken breast topped with melted mozzarella and served with roasted garlic spinach and cremini mushrooms.
The restaurant just launched a new Summer Small Plates menu in addition to their new dishes. The Summer Small Plates will be available throughout the restaurant daily from 3 p.m. to 6 p.m. and can be combined with Prezzo Happy Hour at the bar and high-tops only. It offers a great way to experience the restaurant’s big, bold flavors served tapas style.
“Lighter fare is in vogue come summertime and a spike in temperatures,” Eddie Pozzuoli says. “Summer Small Plates is our way of giving diners a multitude of choices and the power to build their own experience with smaller portions and lower prices, a great way to save and subsist without big hearty dishes.” T
The menu is organized into five sections, with prices ranging from $9 to $21. It offers various options, such as Caprese salad, watermelon salad, tuna tostadas, smash burgers or meatball sliders (two per order), and Prezzo carbonara. Prezzo’s renowned Brunch and Happy Hour are still available.
