What is Superfood? Superfoods are nutrient-rich foods considered to be especially beneficial for health and well-being. So, when I go shopping, I choose foods that fuel my body, support immunity health, and taste good. Today the star of the Superfoods show is Mushrooms!
Touted in Chinese medicine for centuries for their medicinal benefits, antibacterial, anti-inflammatory, and antioxidant properties. Mushrooms are delicious and good for you! Mushrooms provide you with B vitamins such as niacin and riboflavin, vitamin D and potassium for strengthening skeletal health. They are also excellent sources of three essential antioxidants, glutathione, ergothioneine, and selenium, which when teamed together can reduce the signs of aging and promote cellular health.
September is National Mushroom Month, so, I invite you to include mushrooms in your diet. Make this recipe, which also includes salmon which is high in Omega 3’s. Set your healthy intention and watch your joie de vivre come alive!
SEARED SALMON and GARLIC MUSHROOMS
2T. unsalted butter • 2T. olive oil • 2 6 oz pieces salmon filet • 1 small onion, minced • 4 cloves garlic, minced • 1lbs. Cremini mushrooms • 1/2 cup white wine • 1 each sprig fresh thyme and rosemary 4T. chopped fresh parsley • Salt and pepper to taste
Heat the butter and oil in a large pan or skillet over medium-high heat. Sear the salmon for 4 minutes on each side. Remove and set side. In the same pan, sauté the onion, garlic and herb sprigs until softened. Add the mushrooms and cook for about 8-10 minutes until golden and crispy on the edges. Put the salmon back into the pan. Add the wine and cook for 3-5 minutes. Salt and pepper, add parsley and cook for a further 30 seconds, until fragrant.
