It celebrates the onset of fall with a highly awaited seven-course tasting journey that redefines culinary excellence. Crafted by Chef Tristan Brandt and Chef de Cuisine Timo Steubing, this autumn-inspired menu beautifully harmonizes French culinary heritage with modern creativity. Each dish, focused on premium ingredients, presents extraordinary flavors designed to delight even the most discerning diners, offering a truly world-class dining experience.

Highlights of the Tambourine Room’s new fall menu include:
- Sourced for pristine quality, Royal Miyagi Oyster | Crème Fraiche | Ikura | Wasabi is accompanied by a zesty crème fraiche, vibrant red Ikura caviar and fresh wasabi. This amuse-bouche offers a delicate brininess complemented by nuanced umami flavors, making it a perfect match for exquisite Champagne.
- Chef Steubing’s signature dish and personal favorite on the menu, Hawaiian Shrimp | Artichoke | Olive | Salted Lemon, is marinated and accompanied by a rich Parmesan cream infused with shrimp essence, artichoke, and salted lemon skin. It’s garnished with a pickled ginger vinaigrette, red olives, lime gel, and exquisite Ossetra caviar.
- Reflecting Chef Steubing’s passion for the South of France flavors and the kitchen’s mastery of French culinary techniques, Striped Bass | Mushroom | Tarragon | Leeks features Atlantic striped bass poached to perfection for moistness and tenderness and paired with locally sourced produce.
- French technique and Asian influences create a match made in heaven with Squab | Kohlrabi | Sakura | Smoked Tea, which features California squab, delicate Japanese Sakura cherries of various textures, and smoked Chinese tea.
- Served just ahead of dessert, Palo Santo | Palm Sugar Gelato | Coconut Cobra Granita is autumn warmth topped with a palm sugar tuille cookie and a mint tincture. Pastry Chef Sevanna Caban drew inspiration from her roots in Puerto Rico, where palo santo (“holy stick”) is often used for its spiritual and healing properties.
