As The Diplomat Beach Resort continues its transformation ahead of its official debut as Signia by Hilton in May 2026, the iconic oceanfront property is marking a major milestone with the debut of five newly reimagined restaurant concepts. Together, the refreshed venues redefine the resort’s culinary identity, signaling a bold new chapter where dining is immersive, design forward and rooted in elevated craft.

The launch of Palmea Kitchen, Solara, Playa, The Press and a revitalized Diplomat Prime introduces Signia’s refined sense of luxury through vibrant atmospheres, thoughtful interiors and personalized service. Each concept was developed to move beyond traditional hotel dining, offering guests and locals a cohesive experience that flows seamlessly from morning coffee to late night cocktails.

Long recognized as one of South Florida’s premier oceanfront dining destinations, The Diplomat’s updated restaurants are designed to further elevate the guest experience. According to Brian Abel, senior vice president of food and beverage operations and development for Hilton Americas, the resort’s culinary renaissance reflects Signia’s guiding principles by blending destination driven dining, inspired design and top tier service with creativity and intention.

From sunrise, Palmea Kitchen sets the tone as a welcoming breakfast café that elevates American classics with Mediterranean influences. Led by executive sous chef Michelle Milz, the menu features standout dishes such as orange blossom crusted French toast finished with medjool date marmalade and mascarpone, alongside a bold shakshuka with harissa tomato stew, tahini aioli and feta. Indoor and outdoor seating framed by greenery and an airy patio create a relaxed setting for lingering mornings.

Steps from the shoreline, Playa delivers a beachfront bar and grill experience infused with bold Latin flavors and a laid back ocean energy. Guests can enjoy lobster quesadillas, coconut ceviche and a smoky parillada while lounging poolside with frozen cocktails in hand. With rhythmic music, plush seating and uninterrupted Atlantic views, Playa is designed for sun soaked afternoons that stretch effortlessly into evening.

At the heart of the newly renovated lobby, Solara offers an all day lounge experience shaped by tropical modernism. Floor to ceiling windows overlook the pool and ocean, while rich green tile, lush foliage and layered textures create a tranquil yet social atmosphere. The menu blends Mediterranean staples like falafel and hummus with globally inspired dishes including gochujang ahi tuna and a refined take on cacio e pepe.

For casual moments throughout the day, The Press serves as the resort’s all day café. Guests can grab La Colombe coffee, matcha lattes, fresh juices and smoothies, along with handcrafted pastries and baked goods from pastry chef Henry Martignago, including almond croissants, brioche buns and donuts.

Evenings culminate at Diplomat Prime, the resort’s signature steakhouse, now redesigned with a sleek, modern aesthetic that mirrors the precision of its menu. Under the direction of chef de cuisine Jorge Negron, the kitchen highlights premium cuts of filet, wagyu and dry aged steaks, alongside locally sourced seafood and vegetables. The menu spans indulgent classics and refined additions such as 45 day dry aged cuts, A5 Japanese wagyu, Maine lobster fra diavolo, braised short rib and a full caviar selection.

The experience extends to an elevated beverage program featuring an extensive wine cellar and meticulously crafted cocktails. A standout is the Prime martini, served ice cold with vodka, vermouth and a saline solution, paired with an oyster and optional caviar. A newly added outdoor patio introduces live music, specialty bar offerings and a lively setting for happy hour and late night gatherings, while Resident Rewards Wednesdays offer locals an exclusive discount.

Together, these five concepts form a full day dining journey that reflects The Diplomat’s evolution toward Signia by Hilton. Looking ahead, the resort plans further culinary expansion, including the debut of the Verandah Social Club, an adults only pool and beach experience arriving in early 2026, along with Club Signia, new culinary programming and the anticipated return of the property’s legendary speakeasy.

With its renewed focus on destination dining, sophisticated design and elevated service, The Diplomat Beach Resort is positioning itself at the forefront of South Florida’s luxury hospitality scene as it enters its next era.
