A Restaurant With Heart (and Heat)

Dear Olivia Bar & Kitchen brings bold bites, cheeky cocktails, and local soul to Parkland.

Parkland’s dining scene just got a serious upgrade with the debut of Dear Olivia Bar & Kitchen, a vibrant new hotspot blending elevated comfort food, inventive cocktails, and a community-first spirit. Now open at 7805 N University Drive, the restaurant is already creating buzz among locals for its stylish atmosphere and playful-yet-polished menu.

The latest project from P Hospitality Group—led by South Florida natives Eddie and Christina Pozzuoli and restaurateur Paul Greenberg—Dear Olivia is a heartfelt concept named after Greenberg’s daughter. That personal touch carries through the design, with soft green interiors, twinkle-lit outdoor cabanas, lush greenery, and a breezy waterfront view that invites guests to stay awhile.

The menu delivers bold flavors and unexpected twists on comfort classics. Crowd-pleasing starters include Korean-style steak tips, Reuben eggrolls, truffle mushroom flatbreads, and crispy coconut shrimp. Entrees range from beer-battered fish and chips to chicken riggies, char siu pork chops, and grilled beef tenderloin—all elevated with thoughtful presentation. Even casual bites like the OG spicy chicken sandwich and double smash burger are packed with flavor. A whimsical standout? The “Adult Happy Meal,” which pairs a Caesar salad, boardwalk fries, and a martini for a nostalgic nod with grown-up flair.

At the bar, a creative cocktail program led by former American Social mixologist Jose Gill brings fresh energy to Parkland’s nightlife. Signature sips like the mezcal-forward Garden of Eve and gin-based Blood and Honey are joined by curated wines and local craft brews—perfect for anything from a laid-back lunch to a lively Friday night.

Dear Olivia officially opened with a community-focused celebration on August 6, dubbed “First Sip,” which benefitted Eagles Haven, a local wellness center supporting the Parkland community. That spirit of giving back is baked into the restaurant’s identity.

With weekend brunch launching later this month, weekly specials like $10 burger Mondays, and “Olivia After Dark” Friday nights featuring DJs and lounge vibes, Dear Olivia is quickly becoming Parkland’s newest go-to for food, fun, and connection.
