Warmth in the air brings a lighter flare to your cravings, naturally assisting in weight loss! A beautiful silver lining we can all take advantage of if we embrace it, listen to our bodies and have the recipes to enjoy the season!

So, don’t make your body work harder in the heat with heavy foods, it is time to lighten up your meals and feel refreshed and energetic after you eat!

Try this amazing recipe from my family to yours!

Fast, easy, crazy healthy, light and low in carbohydrates… completely super YUM!

Caprese Chicken with cherry tomatoes!

Ingredients:

• 8oz Fresh Mozzarella • 4 natural chicken cutlets

• 2 tbsp Extra virgin olive oil • 1 pt of cherry tomatoes

• Pink sea salt • Balsamic glaze

• Ground pepper • Fresh basil leaves

• Organic salad greens of choice

Prep: Preheat oven to 350°F.

How: Coat baking pan with olive oil or spray! In large skillet, add 1 tbsp oil and heat over medium high for 2-3 minutes. Season chicken with salt and pepper and add to pan. Cook until brown on all sides and juices run clear. Slice mozzarella. Place chicken to sheet pan and top each cutlet with 1 basil leaf followed by a slice of mozzarella. Bake until cheese has melted. Meanwhile, add remaining 1 tbsp oil to skillet and heat over medium high for 2-3 minutes. Slice Tomatoes in halves. Add tomatoes, season with salt and pepper and cook until softened cut the remaining basil leaves and add to the pan. Spoon tomato mixture over the chicken. Add balsamic glaze on top of the chicken and serve over a bed of greens!

Don’t forget your water! Try drinking half your weight in ounces to stay hydrated! This too will assist in your weight loss as thirst is often masked by hunger! Drink first, then eat! Watch your waist line decrease as your daily caloric intake goes down!
