Stubborn Seed and Shingo Join Forces for Exclusive Michelin-Starred Collaboration Dinner

The 10-course dining experience will occur at Stubborn Seed on Monday, Sept. 23.

Two of Miami’s most beloved Michelin-starred restaurants will collaborate for a one-night dining event. On Monday, Sept. 23, SHINGO and Stubborn Seed will offer a 10-course dinner featuring a fusion of dishes from chefs Jeremy Ford and Shingo Akikuni and the talented culinary teams behind these critically acclaimed restaurants. Priced at $295 per person, the seated collaboration dinner will be hosted at Stubborn Seed and reservations are available from 6 p.m. to 8 p.m. on OpenTable.

For the collaboration dinner, Ford and Akikuni are teaming up in the kitchen to create a 10-course tasting menu that showcases their unique culinary styles. Chef Ford will use fresh ingredients from his farm, Ford’s Farm, located in Homestead, to craft dishes alongside Chef Akikuni. The menu will feature items like Sake and Citrus Cured Japanese Yellowtail Crudo, Binchotan Grilled Unagi Kabayaki, 48-hour Pork Belly and Caviar, and Chicken Nanban Sando.

SHINGO’s Head Sommelier, Kaori Yoshioka, will provide wine and sake pairings to complement the dishes, while cocktails created by Stubborn Seed’s Head Bartender, Jackie Rey, will also be featured. The evening will culminate with delicious desserts from Stubborn Seed’s Executive Pastry Chef Ana De Sa Martins.

SHINGO, a 14-seat omakase restaurant, was established by Chef Shingo Akikuni in May 2023 in Coral Gables. Since its inception, SHINGO has garnered critical acclaim and recognition for its outstanding omakase menu, premium ingredients, and carefully crafted beverage pairings. Remarkably, in 2024, less than a year after its opening, the restaurant received One Star from the MICHELIN Guide.

Established by Top Chef champion Jeremy Ford, Stubborn Seed will soon celebrate its seventh year in Miami Beach. As part of the Grove Bay Hospitality Group, this cherished restaurant in South of Fifth has consistently secured a One Star rating from the MICHELIN Guide for the past three consecutive years. The enduring success of Stubborn Seed is a tribute to the unwavering commitment and diligent efforts of a team of exceptionally talented individuals who prioritize hospitality. Stubborn Seed is located at 101 Washington Ave. in Miami Beach.
