Paula’s Food Diaries, a curated culinary series featuring spectacular dishes crafted in collaboration with some of the world’s most renowned chefs, will return to Burlock Coast Seafare & Spirits at The Ritz-Carlton, Fort Lauderdale, throughout July. Chef Paula DaSilva, the hotel’s Director of Culinary and Beverage, has selected recipes for the series, which is now in its second season. Every month, the creations will be featured on the menu, allowing diners to experience the unique flavors and techniques of a diverse lineup of culinary experts. This year’s series features Chef Lorena Garcia’s vibrant Asado Negro Arepas from July 1 to July 31.
Chef Lorena Garcia, renowned for her innovative blend of Latin flavors, will feature her Asado Negro Arepas. Priced at $25, this delightful dish features tender Wagyu short rib, braised in a flavorful marinade and accompanied by artisanal anise-and-piloncillo arepitas, zesty pico de gallo, and a sprinkle of cotija cheese and micro cilantro, encapsulating the lively essence of Latin American cuisine. Chef Lorena’s journey as a chef, entrepreneur, cookbook author, media personality, cookware designer, and restaurateur reflects her deep-rooted love for food, inspired by her upbringing in Caracas, Venezuela, melded with the global flavors and culinary expertise she acquired working in renowned restaurants worldwide. Among her notable restaurant ventures is CHICA at The Venetian in Las Vegas, Miami, and Aspen. Regarded as one of the nation’s leading celebrity chefs, Lorena is celebrated for her appearances on Bravo’s Top Chef Masters and Top Chef All-Stars, NBC’s The Biggest Loser.
The series will introduce two more celebrity chefs later this year, but their identities remain secret.

Burlock Coast in Fort Lauderdale draws inspiration from the Prohibition era, offering patrons a meticulously crafted menu. The attached marketplace and café showcase local artisanal products such as coffee and bread.
