Explore a fresh chapter of bold dishes and inventive cocktails at Burlock Coast

Burlock Coast Seafare & Spirits at The Ritz-Carlton, Fort Lauderdale, is raising the bar on culinary programming with the debut of Adrienne’s Food Diaries, the latest chapter in its acclaimed dining series. Originally launched by celebrated chef Paula DiSilva, the series is now guided by Executive Chef Adrienne Grenier, who brings her creative lens to a lineup of dishes inspired by four culinary masters. From August through November, each month will showcase a featured dish paired with a custom cocktail and the story behind its inspiration.

August opened with Chef Dean Max’s Glazed Black Grouper, a miso-glazed filet served with Thai sweet rice, baby eggplant, bok choy, and coconut curry sauce. A pioneer of the farm-to-table movement, Max is renowned for his global influence and deep ties to Fort Lauderdale dining.

September shifts to vibrant Indian flavors courtesy of Chef Pushkar Marathe. His Pachadi Salad is a colorful medley of shaved carrots, cauliflower, wax beans, tomatoes, watermelon radish, and kale tossed with roasted peanuts and turmeric vinaigrette—a reflection of his Indian roots and global travels.

In October, Chef José Mendín, a five-time James Beard Award semifinalist, introduces Butterscotch Miso Pork Belly, a decadent pairing of confit pork belly, butternut squash purée, and roasted bok choy. November closes the series with Chef Giorgio Rapicavoli’s Muhammara Dip, a bold blend of roasted peppers, hazelnuts, and za’atar served with grilled flatbread.

“It’s an incredible honor to carry on the Food Diaries series and share dishes from wildly talented chefs I’m grateful to know,” says Chef Adrienne.
