Flight West Opens in South Miami

A new restaurant is raising the bar for dining in South Miami.

Flight West Miami has opened at 5984 Sunset Drive, bringing live-fire cooking, globally inspired cuisine, and one of the area’s largest whiskey collections to the neighborhood.

The restaurant centers its menu around a Mibrasa charcoal oven, which imparts a subtle smoky flavor to dishes ranging from a 32-day dry-aged ribeye to charred octopus with smoked chickpea hummus, roasted cauliflower with peanut sauce and jalapeño crema, Alaskan king crab with a gochujang-whiskey glaze and smoked baby back ribs. Whiskey is incorporated throughout the menu in glazes, sauces and even house-made ice cream.

The restaurant’s beverage program is equally ambitious. Guests can choose from more than 350 spirits, including bourbon, rye, Scotch, Irish and Japanese whiskies, along with a curated wine list featuring more than 50 labels. Signature cocktails include the Maduro, an Old Fashioned made with plantain-infused Four Roses bourbon, and The Crossroads, inspired by South Miami’s historic intersection.

Designed with Art Deco influences, the restaurant features a dramatic backlit bar, red marble tabletops, mirrored walls, and rich olive and maroon seating, creating an upscale yet welcoming atmosphere.

Originally founded in Rochester, New York, Flight West is known for its whiskey-forward identity and shareable New World cuisine. The South Miami restaurant is the brand’s first expansion and plans to introduce guided whiskey tastings and educational events in its private dining room later this year.
